Job Details

  • Manage the factory to make good quality pasta every day.
  • Focus on Long Goods (sheets) and Short Goods (sheets).
  • Make sure the machines run fast and stop time is low.
  • Control the drying process so pasta does not break.
  • Check the semolina and materials to keep the taste good.
  • Lead the workers and solve problems on the line.
  • Keep the factory clean and safe (HACCP / Food safety rules).
  • Report to management about production numbers.
  • Ensure specific moisture levels and drying curves are maintained to guarantee product stability and cooking quality .
  • Monitor waste rates and analyze root causes for cracks, breakage, or white spots in the final product.
  • Coordinate with maintenance to ensure preventative maintenance is scheduled, especially for critical equipment like long-goods dryers and cutters .
  • Lead, train, and mentor shift leaders and line operators, ensuring they understand  handling different pasta sheets.
