The Assistant Fresh Food Manager supports the effective daily operation of departments by ensuring production plans are executed efficiently, stock availability is maintained, food safety and cleanliness standards are upheld, and team members are guided to deliver high-quality fresh food products, while supporting the Department Manager in achieving operational and commercial objectives.
 

• Ensure smooth daily production operations by supporting the execution of bakery and kitchen production plans in line with demand forecasts and quality standards.
• Maintain stock availability and accuracy by checking inventory levels, supporting order preparation, and reporting missing or delayed items for timely follow-up with the receiving team.
• Support equipment readiness and safety by inspecting tools and machinery daily and promptly reporting faults or breakdowns to minimize operational disruption.
• Maintain hygiene and food safety standards by supervising cleaning activities, ensuring cleaning schedules and checklists are fully completed and documented.
• Control operational costs by monitoring daily labor usage, packaging consumption, energy use, and highlighting variances to the Department Manager.
• Ensure attractive product presentation by confirming shelves, counters, and displays are fully stocked, correctly priced, and accurately labeled at all times.
• Reduce waste and improve efficiency by recording daily waste figures, analyzing causes, and escalating issues with improvement recommendations.
• Support team performance and continuity by guiding staff on task execution, food preparation standards, and effective shift handovers.
• Enable effective communication by acting as a link between team members and the Department Manager to ensure clarity of instructions and feedback.
• Ensure leadership coverage by managing the department in the absence of the Department Head to maintain service levels and operational continuity.
