Laboratory Engineer

  • Perform daily physical, chemical, and microbiological analyses on raw materials, auxiliary materials, packaging, semi-finished, and final products to ensure compliance with food safety and quality standards (ISO 22000 / FSSC 22000 / HACCP).
  • Conduct routine tests on raw meat (pH, protein, fat, moisture, nitrite, etc.) and final products (preservation tests, salinity, texture, color, TVN, FFA, etc.).
  • Carry out periodic microbiological testing for water, ice, air, surfaces, and hands based on the sanitation and monitoring plan.
  • Prepare culture media and operate laboratory equipment (incubator, autoclave, balance, pH meter, etc.).
  • Record all test results in official paper and electronic logs, and maintain reference samples as per system requirements.
  • Perform routine calibration and basic maintenance for laboratory instruments and monitor validity of chemicals and prepared solutions.
  • Participate in the Environmental Monitoring Program and analyze trends.
  • Support internal and external audits (WFP – NFSA – ISO – FSSC).
  • Report any non-conforming results immediately and recommend corrective actions.
  • Assist the QA in preparing monthly reports and data analysis.
