1. Mixing Operations Management:
- Supervise daily mixing activities for biscuit dough preparation.
- Ensure all recipes are followed accurately (ingredients, mixing time, temperature, dough consistency).
- Monitor the operation of mixers, blenders, and related equipment.
- Ensure optimal dough quality for various biscuit types.
2. Quality Control:
- Verify the quality of raw materials (flour, fat, sugar, flavors, additives).
- Ensure dough texture, moisture, and consistency meet product specifications.
- Coordinate with QC team to resolve any quality deviations.
3. Production Coordination:
- Plan mixing schedules according to production requirements.
- Ensure continuous supply of dough to the forming and baking lines.
- Communicate with production supervisors regarding batch changes and priorities.
4. Staff Supervision & Training:
- Supervise and guide mixing operators and helpers.
- Train staff on correct mixing procedures, hygiene practices, and safe equipment operation.
- Ensure proper shift handover and staffing levels.
5. Equipment & Maintenance:
- Monitor mixer performance and report any abnormalities.
- Coordinate with maintenance teams for preventive and corrective maintenance.
- Ensure cleaning and sanitation of mixers and surrounding areas.
6. Safety & Hygiene Compliance:
- Ensure strict adherence to food safety standards (HACCP, ISO, GMP).
- Maintain high hygiene standards in the mixing area.
- Ensure staff follow safety protocols and wear proper PPE.
7. Documentation & Reporting:
- Maintain batch records, mixing logs, and production reports.
- Track raw material consumption.
- Report daily performance, wastage, and issues to the production manager.
Skills
- Diploma or bachelor’s degree in food technology, Production, or related field.
- Minimum 3–5 years of experience in biscuit or bakery mixing operations.
- Strong knowledge of dough mixing techniques and equipment.:
- Good understanding of food production processes.
- Strong leadership and communication skills.
- Ability to troubleshoot mixing-related issues.
- Knowledge of food safety standards and quality control.
